O caminho da nutrição em cada prato: uma proposta de material educativo.

Resumo
Introdução: O Brasil enfrenta desafios na transição nutricional, com aumento do consumo de alimentos ultraprocessados e redução na ingestão de frutas e hortaliças, contribuindo para problemas de saúde, como sobrepeso e obesidade. A Educação Alimentar e Nutricional (EAN) é uma ferramenta essencial na saúde coletiva, capaz de auxiliar na promoção de hábitos saudáveis e mudanças sustentáveis nos padrões alimentares. Objetivo: Orientar a população adulta de Natal/RN sobre a importância de adotar uma alimentação saudável. Metodologia: Trata-se da metodologia adaptada da pesquisa-ação. Iniciada com uma fase exploratória analisando dados do SISVAN para avaliar o consumo alimentar em Natal/RN de 2019 a 2023. Em resposta a esse problema, foi desenvolvido um material educativo. Resultados e Discussão: De acordo com os dados do SISVAN, de 2019 a 2023, em média 61% da população de Natal consumiram fruta, 60% consumiram legumes e verduras e 84% consumiram feijão. A nível nacional, 69% consumiram frutas, 78% legumes e verduras e 79% feijão. Já os alimentos ultraprocessados, em média, 80% dos natalenses disseram consumir, comparado a 74% dos brasileiros. Com base nesses resultados, foi elaborado um material educativo para promover hábitos alimentares saudáveis. Conclusão: A predominância de alimento ultrapocessado na rotina alimentar destaca a importância de campanhas de EAN visando fornecer orientações práticas para incentivar hábitos alimentares mais saudáveis na população, além de auxiliar o trabalho dos profissionais atuantes nas unidades básicas de saúde
Introduction: Brazil faces challenges in nutritional transition, with an increase in the consumption of ultra-processed foods and a reduction in the intake of fruits and vegetables, contributing to health problems such as overweight and obesity. Food and Nutrition Education (FNE) is an essential tool in public health, capable of promoting healthy habits and sustainable changes in dietary patterns. Objective: To guide the adult population of Natal/RN on the importance of adopting a healthy diet. Methodology: This is an adapted action-research methodology. It started with an exploratory phase analyzing data from SISVAN to evaluate food consumption in Natal/RN from 2019 to 2023. In response to this problem, educational material was developed. Results and Discussion: According to SISVAN data, from 2019 to 2023, an average of 61% of the population of Natal consumed fruit, 60% consumed vegetables, and 84% consumed beans. Nationally, 69% consumed fruits, 78% vegetables, and 79% beans. Regarding ultra-processed foods, an average of 80% of Natal's population reported consuming them, compared to 74% of Brazilians. Based on these results, educational material was developed to promote healthy eating habits. Conclusion: The predominance of ultra-processed food in the daily diet highlights the importance of FNE campaigns aimed at providing practical guidance to encourage healthier eating habits in the population, as well as assisting the work of professionals in primary health care units.
