This research is a bibliographical analysis on diet therapy in the patients with CRONH disease, a chronic inflammatory condition characterized by relapsing and remitting episodes of transmural inflammation, as well as by "skipped lesions" and normallooking segments of intestine disrupted by diseased areas. Although any part of the gastrointestinal tract may be involved, the distal ileum and proximal colon are the most commonly affected. The objective of this review is to define the role of diet in the pathogenesis and management of IBD, explaining the potential functional role of the Mediterranean Diet in the prevention on treatment of inflammatory bowel disease. The research was carried out from theoretical understandings of the cited authors throughout the text, whose central ideas are contextualized based on the authors’ vision.
