Os biofilmes são uma comunidade complexa e organizada de microrganismos ligados irreversivelmente entre si e/ou a uma superfície biótica ou abiótica, inclusa em uma
matriz de substância polimérica extracelular. Estes biofilmes trazem um assombroso desafio para as indústrias alimentícias quando os protocolos de higiene e limpeza são ignorados. A limpeza e a sanitização são as formas mais utilizadas na finalidade de prevenir a adesão deles nas superfícies, evitando assim a contaminação dos alimentos. Entender o conceito, a estrutura, composição e a formação deles é fundamental na busca de estratégias de controle e remoção. O objetivo deste estudo visa esclarecer como ocorre a aderência de biofilmes nas superfícies, seus métodos de remoção, os impactos econômicos para a indústria e os impactos na saúde pública.

Understanding their concept, structure, composition and formation is fundamental in the search for control and removal strategies. The objective of this study aims to clarify how biofilms adhere to surfaces, their removal methods, the economic impacts for the industry and the impacts on public health.
