Alimentos processados: o impacto do fácil acesso na saúde e no estado nutricional dos estudantes dentro e fora da escola

Resumo
Objetivo: Analisar a alimentação dos estudantes brasileiros e estrangeiros e os motivos que levam os estudantes a consumirem cada vez mais alimentos ultraprocessados. Busca-se ainda compreender os impactos desses alimentos na saúde dos estudantes para o desenvolvimento de doenças crônicas não transmissíveis, além de observar a qualidade nutricional dos alimentos comercializados nas cantinas escolares e comércio ao redor das escolas. Do mesmo
modo, destacar se as atividades de educação nutricional tiveram êxito em suas propostas de intervenção. Método: Trata-se de uma revisão narrativa e para este estudo foram consultadas as bases PUBMED, GOOGLE ACADÊMICO e SCIELO e incluídos artigos publicados nos últimos 10 anos. Resultado: Foram selecionados 12 artigos que se referem à alimentação dos estudantes, bem como os riscos da alimentação ultraprocessada para os estudantes, o acesso deles a estes alimentos, juntamente com os resultados de intervenções nutricionais educativas. Conclusão: a análise dos artigos demonstrou que alimentação ultraprocessada apresenta risco para os estudantes por conta de carecerem de nutrientes essenciais para o
desenvolvimento. O fácil acesso e a promoção massiva destes alimentos foram identificados como uma questão preocupante. A disponibilidade dentro e fora das escolas induz ao consumo e a formação de hábitos não saudáveis que podem prevalecer ao longo da vida se estratégias de educação nutricional eficazes não forem aplicadas para ofertar conhecimento e autonomia dos estudantes para com suas escolhas alimentares.
Objective: To analyze the dietary habits of Brazilian and foreign students and the reasons why students are increasingly consuming ultra-processed foods. The aim is also to understand the impact of these foods on students' health in terms of the development of non-communicable chronic diseases, as well as to assess the nutritional quality of foods sold in school canteens and surrounding establishments. Additionally, the study aims to determine whether nutrition education activities have been successful in achieving their intervention goals. Method: This is a narrative review, and for this study, the PUBMED, Google Scholar, and SCIELO databases were consulted. Articles published within the last 10 years were included in the review. Result: A total of 12 articles were selected that focus on the students' dietary patterns, the risks of consuming ultraprocessed foods among students, their access to these foods, as well as the outcomes of nutritional educational interventions. Conclusion: The analysis of the articles demonstrated that ultraprocessed foods pose a risk to students due to their lack of essential nutrients for development. The easy access and massive promotion of these foods were identified as concerning issues. The availability of these foods both within and outside schools encourages consumption and the formation of unhealthy habits that can persist throughout life if effective nutritional education strategies are not implemented to provide students with knowledge and autonomy in their food choices.
