Monografia Acesso embargado Perfil do consumo e percepção da qualidade de carnes entre estudantes de diferentes cursos da UNISUL, Tubarão/SC(2017) Silva, Maraizi daThe present study had as objective to evaluate the consumption profile and the perception of the quality of the main meat species between students of different courses of UNISUL, from Tubarão, Santa Catarina. In the order to make the search, were applied 130 questionnaires composed of questions related to description and identification of consumption profile, as well of questions related to identification of atributes considered most importants by the consumers at the time of purchase of the meat. The most part of students interviewed (68,5%) belongs to women and age range between 17 and 23 years. Among the interviewed, 4,6% declared don’t consume meat, but 95,4% say consume meat at least once a week. The most part has preference for the beef (45%). The appearence was considered the main feature observed at the moment of purchase by 64,6% and the sanitary inspection seal isn’t observed for the most part of students (71,5%). Among the reasons for the not consumption of different carneas species, the taste was the most mentioned. The pig meat was the most mention, being associated with the risks of disease transmission. The students have preference by the consumption of meat in the nature form (89,2%) and just 6,1% have preference to industrialized products.Monografia Acesso embargado Principais causas de condenações de carcaças em frangos de corte orgânicos(2017) Zanette, Marina CasagrandeThe poultry industry has been adapting its production means due the demand of the consumer market that is increasingly opting for products of organic origin. Considering the economic loss caused by the carcasses condemnation in the slaughterhouses, in addition to the lack of greater studies related to the organic production, this study aimed to describe the main causes of the partial and total condemnation of poultry carcasses in the post mortem inspection of organic cuts in a fridge slaughterhouse located in the city of Santa Rosa de Lima in the state of Santa Catarina. In this study, slaughter daily records were used following the post mortem criteria stablished by the State Inspection Service (SIE) performed in the period between June 2016 and September 2017 and the entire discard causes have had their frequency distributed accordingly to the type of condemnation using the computer software Excel Office 2010. As the result, 67.956 poultries were inspected and 8.894 have presented some type of post mortem condemnation. Among the total of the slaughtered poultries 12, 97% have obtained as final destiny the partial condemnation and only 0, 12% were totally condemned. Thus, the most frequent total condemnation were caused by ascites syndrome (0,04%) and cachexia (0,03%), and the partial condemnation by excessive scalding (7,69%) followed by contusion/fracture (4,27%).
