Artigo Científico Acesso embargado Elaboração de brownie adaptado a consumidores diabéticos(2020) Arruda, Eduarda AlflenThe purpose of this research was to elaborate a brownie for diabetic consumers. A conventional brownie preparation was defined and some ingredients were substituted, considering the glycemic index, fiber content, macronutrient quality, texture and sweetening. In the first test, three recipes were made with different bases (sweet potato with carrot, carrot with pumpkin, and pumpkin with sweet potato), however, there was a need for improvement. On the second day of testing, two recipes were made based on the best accepted recipe from the first test, with changes in the cocoa content, and the addition of sweetener to one of the recipes. Both offer flavor, texture and pleasant aroma. After the preparation of the recipes, the datasheet and nutritional composition table were carried out. Considering the substitutions of wheat flour and sugar for vegetables, nuts for peanuts, and the use of 70% cocoa powder, preparations offer pleasent result, being a healthy, practical and adequate option for diabetic consumers by your satisfactoy nutritional content, low cost and sensorial properties. It is suggested that sensory analysis be carried out with diabetics, assessing the target audience's preference in relation to the two options.
